Taiwan’s processed poultry egg products include chicken eggs and duck eggs. Chicken eggs run 4th in individual agricultural products value. Major export egg products are duck egg products and a portion of processed poultry egg products.
More than 90% of duck eggs produced in Taiwan are processed into preserve eggs such as “Peedan” (processed poultry egg; century egg) and salted egg, in which 40% is “Peedan” and 60% salted egg. “Peedan” is made from the principle of alkali coagulation. The color of egg white in the finished product is tea green while egg yolk is olive green, featuring “piny flower” patterns outside and “soft-boiled” inside. “Peedan” is a favorite delicacy of Chinese since the old days. It can be eaten plain and taste its unique flavor and gummy texture, also an ingredient used in many dishes.
Salted preserved processed poultry egg is also a necessary traditional ingredient of Chinese during festivities. Peak season of salted preserved processed poultry egg during the dragon boat festival (May 5th festival) and moon cake festival (autumn festival), which is usually used as an ingredient for glutinous rice dumpling and moon cakes. Aside from festivities, whether as a dish to go with congee during breakfast, salted preserved processed poultry egg is also cooked with bitter gourd, steam lean meat with salted egg yolk, etc. Salted preserved processed poultry egg is a daily necessity in Chinese people’s life to satisfy their demand for good food.
